Peanut Butter Chocolate Chip Cookies

Since I got really serious about achieving my health goals, I have crowded a lot out of my diet by eating organic whole foods & high quality protein.


To celebrate my success so far, I decided to create and bake these cookies to enjoy!


These cookies can be enjoyed guilt-free while supporting health & wellness goals! Win-win! 🤩


Ingredients:


1/3 cup organic peanut butter (no sugar-added)

1 Tbsp coconut oil

3 eggs

1 tsp vanilla extract

1 cup organic almond flour

2-3 scoops (1 scoop = 1/8 tsp (1 Tbsp sugar) monk fruit extract powder  (1 scoop = 1/8 tsp (1 Tbsp sugar). Note: 2-3 scoops depending on how sweet you'd like the cookies)

1/4 cup dark chocolate chips (no sugar-added)

1/3 cup chopped walnuts

1/3 cup shredded coconut (opt.)

1/2 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt


Directions:


Preheat oven to 325F degrees. Mix the first FOUR ingredients together until smooth. In a separate bowl, mix remaining ingredients together and then add dry ingredients and mix until well combined. Scoop onto a cookie sheet, making 16 cookies. Bake at 325F degrees for 15 minutes or until lightly golden brown. Remove from oven and let cool before enjoying.
